SUGAR-FREE PROTEIN BROWNIES

These easy-to-make brownies are rich, chocolatey, fudgey and Moorish, yet refined sugar free and so easy to make. Just put everything in a bowl and combine! I can vouch that they are delicious straight from the fridge, but also yum popped in the microwave for 30 seconds with a dollop of crème fraiche.

INGREDIENTS

  • 150g almond butter
  • 270g apple puree (could use pumpkin or sweet potato)
  • 50g cacao
  • 100g sugar-free (or 70% cocoa) chocolate chips
  • 50g vanilla protein powder
  • 2 sachets Nuvia Sweetener
  • ¼ tsp salt
  • ¼ tsp cinnamon
  • 1 egg (optional)
  • 50g walnuts, roughly chopped (optional)

METHOD

  • 1. Preheat oven to 160C.
  • 2. Line an 8 inch pan with parchment and grease with butter or oil.
  • 3. Gently warm the almond butter until stir-able and then add all the other ingredients and mix thoroughly.
  • 4. Pour the brownie mixture into the prepared pan and bake in the centre of the oven for 20 – 25 minutes until nearly completely set. They will continue to set as the cool and it is quite nice to have a slightly fudgey centre.
  • 5. Store in the fridge.
