PUMPKIN CUPCAKES WITH CREAM CHEESE FROSTING

INGREDIENTS

  • 1 1/3 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp bi-carb soda
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp all spice
  • ¾ cup pumpkin puree
  • ½ cup Nuvia Baking
  • 2 tbsp Coconut sugar
  • ½ cup vegetable oil
  • 2 eggs

  • Cream cheese frosting
  • 250g cream cheese
  • 100g butter
  • 2.5 cups icing sugar

METHOD

  • 1. Preheat oven to 160C and line a muffin tray. In a large bowl combine flour, baking powder, bi-carb soda and spices.
  • 2. In small bowl whisk together pumpkin puree, Nuvia Baking, coconut sugar, vegetable oil and eggs.
  • 3. Make a well in the centre of the flour and pour wet ingredients into fry ingredients and fold together with a wooden spoon until just combined.
  • 4. Divide mixture among 12 muffin tray.
  • 5. Bake in the oven for 20-25 min or until a skewer comes out clean.
  • 6. Meanwhile prepare icing. Beat cream cheese and butter together with electric beaters. Add in icing sugar ¼ cup at a time.
  • 7. Allow muffins to cool completely before icing.
