    Makes 200 prawn rolls

INGREDIENTS

  • SAMBAL CHILLI PASTE (makes 200g paste)
  • 30g dried chilli
  • 8 fresh chilli
  • 8 tbsp onion
  • 8 tbsp garlic
  • 3 tbsp shrimp paste
  • 3 tbsp grated ginger
  • 2 tbsp dried shrimp (chopped finely)
  • 8 tsp vegetable oil
  • ½ to 1 tbsp Nuvia Sweetener

  • HAE BEE HIAM FILLING (makes 200g filling)
  • 2-3 tbsp sambal chilli paste (above)
  • 2 tbsp dried chilli*
  • 2 tbsp shrimp paste (fried previously in Sambal Chilli Paste recipe)
  • 100g dried shrimps, chopped finely
  • 50g onion shallots, chopped finely
  • 50g garlic, chopped finely
  • 3 to 5 tbsp vegetable oil
  • ½ to 1 tbsp Nuvia Sweetener
  • *optional

  • ROLLS
  • Spring roll skin
  • Egg wash*
  • *optional

METHOD

  • FOR THE SAMBAL CHILLI PASTE
  • 1. Cook the shrimp paste until dry and fragrant by chopping up the pieces with your spatula (about 15 min to release the fragrance).
  • 2. Blend all of the ingredients together into a paste.
  • 3. Use as fresh chilli paste or fry with oil to keep for 1 week in the fridge in an airtight container.

  • FOR THE HAE BEE HIAM FILLING
  • 1. Heat the vegetable oil in the pan until it starts to smoke at high heat.
  • 2. Fry the shallots until transparent then add the garlic and fry until they turn brown.
  • 3. Add 2-3 tablespoons of the sambal chilli paste into the pan to fry.
  • 4. Add Nuvia sweetener to taste.
  • 5. Finally, add all the dry ingredients to fry until the mixture is fragrant and dry.

  • FOR THE ROLLS
  • 1. Slice the spring roll skin into squares. For bite-size rolls, slice the skin into 5 cm. I would suggest 7 cm as the maximum size.
  • 2. Place a small amount of hae bee hiam filling in the middle across the spring roll skin.
  • 3. In a diamond orientation, roll in the bottom, sides and then top of the spring roll skin to create a prawn roll. Option: to seal with an egg wash before frying in the air fryer.
  • 4. Air fry at 200 degrees celsius, duration varies with the sizes. For 5cm rolls, it will take about 6 to 8 minutes, and for 7cm rolls, it will take about 12 to 14 minutes.
 

STORAGE INSTRUCTIONS

These Hae Bee Hiam Rolls are best stored in air tight containers.

TIPS AND TWEAKS

Ensure fillings are thoroughly dry to prevent sogginess.

To ensure tight sealing of the spring roll skin, with egg wash the tip at the end of rolling.

Egg wash the roll before air frying for a more golden finish.
